Alcohol & THC, oh my, oh me.’ At one of Chef Ashbell’s grand dinner parties in New York during the last century, Sommelier Society of America’s Chef Darrin responded to my question ‘I’ve used hemp and prayer, what about alcohol and prayer?’ He flashed one of his huge smiles and said ‘Why do you think they call it spirits?'
The connection between marijuana and alcohol is legendary.  Many home enthusiasts are putting their best buds in alcohol, soaking them for 10 days or more, and enjoying the enhanced nectar. Hemp beer is a much sought after drink and the illusive hemp liquor is just beyond the reach of the US market, for now.  The relatively new title of budtender is perfect for folks seeking to rise to the best of industry standards. The marijuana clubs are a $1.7 billion dollar industry, second only in sales to Viagra, even with the limited number of states where it's legal.  Marijuana colleges are budding up all over as described in the New York Times, Time Magazine and demonstrated by colleges like Oaksterdam University .
In an effort to stave off the projected food shortage, folks are working to raise awareness of hemp foods and beverages, i.e. Time4Hemp , Hippie Butter , VoteHemp and others.  Hemp alcohol and other recreational uses are part of that discussion.
Of course this mission can encourage budtenders. Below are some questions, only a starter list, for consideration as we explore setting standards for hemp consumption / budtenders equal to that available to patrons of/& bar tenders and wine stewards.

1.  What is the best way to certify budtenders, i.e. the type that are currently serving at medical marijuana clubs & as care givers? 
2.  What wines and beers go best with hemp foods –i.e. a hemp pasta dish under a bold red sauce?  Medical marijuana chocolate brownies go with which alcoholic beverage?
3.  What buds (see variety in clubs) stimulate the taste buds best, oral and elsewhere?
4.  What's the best wine and weed combos (or not combined) for parties, dining out, chillin’? 
5.  What about hemp in vodka and hemp beer , i.e. black hemp ale ?
6.      What is a tincture and how is it made? 
7.  How do we empower new and existing companies to capitalize on this market?

These and other questions could expand the word Sommelier in this new century to include wine and bud stewards, specialists in the spirits found in the plants. We have been the victims of the politics of scarcity for too long. Now is the time to break those chains and hemp is a great place to begin. 
Consider supporting a simple executive order ending the drug war as we prepare for the return of sanity to government, so we can all live the happiest lives possible.  It’s good to start this process with the food supply.  Of course, hemp biomass can be burned to clean / distill water and hemp plastics can be made into gadgets.


MISSION ACCOMPLISHED!

What does success look like? Here are a few clues.


      World’s food shortage solved by filling the void with hemp food making unwanted hunger an ancient concept. 

      Hemp farming is off the law books as a crime.  Willie Nelson’s Farm Aid has an active role in running the Hemp For Victory Program.  Unused government land is leased to verified family farmers and small businesses. 

      With the hemp plant free, we will be prospering.  Wise ways are used to use the profits to help the people.

      Use the victories of the hemp legalization movement to address what else is in the way of the Will of The People’s empowerment, i.e. toxic energy, lack of adequate housing, environment, etc. because hemp can help in these fields too. 

      All cuisines can be adapted for hemp food additions.  Hemp food cooking stars are built based on their recipes and flair.

      Hemp food cooking contests, coupons, incorporation into educational facilities, military, institutional and other marketing/sales applications are thriving.

      Nature is restored with her full compliment of plants to make things run better.

Are you finished with the politics of scarcity?
Are you willing to change?  Are you ready for a better world?
We do not have to follow our leaders down this path of doom and gloom. 
If you are finished too, this is a call to action.
When the problem is toxic medicine the solution is effective, non-toxic medicine.
When the problem is violence, the solution is the peace pipe.
When the problem is a failed economy, the solution is 50,000 new products.
When the problem is a lack of food, the solution is……………

and a great foundation food for many cuisines.
So let’s stop pretending not to know we can save ourselves.

**The alcohol industry seems apprehensive about marijuana. Here’s a way to include them by increasing their profits with hemp. Cooking with alcohol and hemp can be a great frontier to develop i.e. Hemp noodles used in a portabella mushroom stroganoff marinated and cooked with red wine. Or there is reported in Europe to be a Hemp Honey liquor from Holland but it’s illegal to bring it into the US – maybe someone from here can make one.

HEMP TEXTURED VEGETABLE PROTEIN
     


Among hemp’s 50,000 products should be a hemp based textured vegetable protein made from hemp flour and protein powder, processed and sold direct on the internet.  Textured Vegetable Protein (TVP) is what’s marketed as a meat analogue or meat substitute in supermarkets, for example Morningstar Farms or Loma Linda products.  Many vegetarians have celebrated their early experiences with meat substitutes only to learn later about the many health problems associated with soy consumption
There are few if any companies making Textured Vegetable Protein (TVP) from hemp “Hemp TVP©” (HTVP).  Currently the market is soy dominated (complete with its own futures market, like what should be for hemp) with sub markets in wheat and corn.  However, hemp is a vegetable protein that can also be made into a meat substitute for traditional and new age cooking.  Currently TVP is made from mostly soy or wheat gluten or corn which is what makes hemp TVP a perfect nitch market product.  Hemp flour and protein powder can be used in recipes to make home made hemp TVP (see next pages for a home made TVP.)
With the right recipe modifications to shift to healthy hemp based versions of meat dishes, (the public domain recipes are being developed) this market can be quickly filled with home based catering and other food production versions of the meat substitute.   With a hemp based all natural TVP lasagna (Hempzana ©), in addition to hemp pasta, hemp cheeses and seasoning, can also have hemp TVP burger that would defy detection when properly seasoned and with the right blend of oils.  Heavy on the sun dried tomatoes, portabella mushrooms, and a cup of wine for the sauce (one for the cook), seems like the foundation of a memorable meal.  Pesto sauce, which is basil based, can get a new flare with hemp leaves and seeds added into the mix.
Home computers can help folks set up small businesses and other home based catering ventures that specialize in hemp based cuisines.  The results of empowering many home based businesses are exponential.  Unemployment can be replaced with self employment. More folks can earn at home.  When hemp prohibition is over, cooks will be able to cost effectively purchase hemp products and/or grow their crops.  It’s always amazing to ponder that the US’s number one cash crop, hemp, is illegal.  Talk about designed to fail.  Hope springs eternal, and here’s some hard numbers. Hemp’s 50,000 products can create 5,000,000 jobs quickly with only 10 companies per product and 10 employees per company.  The product medical marijuana already has more than 10 companies w/10 employees so it’s feasible that hemp can break our economic crisis with opportunities for growth based on motivating money to change hands.
IDEA SAMPLES – The magazine THC Expose reported both Hemp Honey Liquor and a hemp based pesto sauce are already on the market. “Weed Wings©” - fried or baked meat or veggies cut into bit size pieces and prepared ½ hemp, ½ either white or wheat flour, as per Chef Brad’s suggestion. Hemp pasta – “Pot Pasta©” dishes using hemp flour for the pasta and hemp leaves as a seasoningWeedCritters© (HTVP [cow, pig, chicken, lamb & fish] substitutes) Hempsage© (hemp seed based sausage) Mota Tacos© & Ganga Burritos© & Hemp Dogs© & Blunt Burgers© made from hemp textured vegetable protein. Traditional Home Made Textured Vegetable Protein

Here's a recipe (not yet proofed) on making
textured vegetable protein (aka gluten):

Ingredients
1 5 lb. bag whole wheat flour
Clean running water
4 cans beef broth
3 Ribs Celery
Onion
Carrots
Garlic
Parsley
Onion soup mix


1 5lb. bag of whole wheat flour (can use white, but whole is healthier)


In a very large bowl pour in all 5 lbs. of flour. Under COLD running water, slowly fill bowl with water and start mixing with your hands the flour trying to keep it held together in a ball. Keep rinsing the flour and molding it with your hands rinsing it to remove the starch. When all the water comes clear (you have rinsed all the starch out), you will end up with a small rubbery ball. (It takes lots of rinsing)

Broth:

4 cans of beef broth, 3 ribs celery, onion, carrots, garlic, parsley. Or whatever rich broth you choose will work. Add onion soup mixes, etc. because this is what gives the TVP it's flavor.
Take the ball of TVP and slice it. Drop into boiling broth, then turn heat down and simmer for about 2 hours. Remove TVP from broth. At this point, you can put it through a meat grinder, then dehydrate in a dehydrator. Let cool, then store in airtight containers. Reconstitute with water and use in chili, spaghetti sauces, etc.
If you don't wish to dehydrate, you can grind and refrigerate and use at your leisure. You can also bread and fry to make vegeburgers. Many different ways to cook TVP.  Also, when rinsing the whole wheat flour, the bran will be rinsed away. However, most of it lands in the bottom of the bowl. You can strain and save the bran for use in breads and muffins.

Vegeburgers:

2 cups fresh TVP, 1 egg, 1/2 cup oatmeal, 1/2 cup chopped onion, 1 tsp sage, garlic powder to taste, 1/2 cup ground walnuts ( can also add sesame seeds). Mix all ingredients together, pat into patties and fry in oil. 


Somayah’s Hemp Textured Vegetable Protein Proposed


1 5 lb bag of hemp flour/protein*

(It takes lots of rinsing).

Los Angeles’ Sister Somayah Kambui use to amaze folks with her Nigritian (her strain of hemp) Tacos.  She was not planning on being dead and kept her recipe to herself as she was planning to start a hemp food company when prohibition is over.  This recipe is based on information she shared and is being tested – subject to change - based on the recipe posted by bardou (bardou@baloney.com), December 10, 1999 – for research and development purposes only – a starting point to the question of how to make TVP at home using hemp flour and protein powder instead of soy. The final recipe may differ dramatically.
